Delicious Destinations is one of the major fundraising efforts for Ascension St. Vincent’s Community Foundation, with all proceeds directly supporting the hospital's mission of providing high-quality healthcare to those in need. Ascension St. Vincent’s has a long-standing commitment to delivering compassionate care to underserved communities, ensuring that everyone has access to the medical services they require, regardless of their financial situation. The funds raised at this event will go toward critical programs and services that benefit countless patients across the region.
A few weeks ago, Belkis and Shannon joined Dr. Alfredo Quiñones-Hinojosa, one of the world’s leading brain surgeons, at a Hightower Fellowship event at Mayo Clinic. Dr. Q shared his incredible journey from field worker to renowned neurosurgeon and answered questions about immigration, cancer, and his impactful work in Jacksonville. It was an unforgettable experience.
We recently had the privilege of hosting a taco dinner at the Jacksonville Hope Lodge, bringing comfort and support to cancer patients and their caregivers. This event was especially meaningful for our team. We are grateful to our partners, including Brandon Cornellier from NexGen Roofing, for helping make this evening a success.

Shannon experienced pre-term labor when her first child was born. Her son was nearly eight weeks early and spent 28 days in the neonatal intensive care unit. She has since become an advocate to raise awareness about prematurity and volunteers with the March of Dimes. Shannon is a member of Alpha Delta Pi Sorority. Shannon volunteers her time with Jacksonville Area Legal Aid, and The Women’s Board benefiting Wolfson Children’s Hospital.
Shannon is an advocate for moms, especially working moms. She edits a blog, MrsMakeItRainka.com dedicated to helping working moms succeed.
